Plato’s, located in the Aspen Meadow’s Resort, immediately transports guests to a relaxed and calmer state of mind, perfectly appropriate in this hotel for ‘higher thinking.’  Exactly what does that mean?  Well, this foodie temple is the signature restaurant in what was originally conceived by Austrian architect Herbert Bayer, circa 1953, as the home of the Aspen Institute (a sanctuary for world leaders to discuss and reflect on the ideas that define a good society).   It now also functions as a hotel and Plato’s, a distinctive part of the sanctuary, is offering modern sophisticated cuisine there.

Executive Chef Todd Slossberg is known for his innovative techniques and for using fresh, locally sourced seasonal ingredients.  Chris Becker, who is not only the manager but also the sommelier, knows how to pair wines perfectly with Chef Todd’s food.  He’s filled with facts and background on the different wines from around the world.

Dining at Plato’s begins with a glass of Borgo Magredo Prosecco and savory American caviar.   For the next course of Foie Gras Pate with Poached Sour Apples, a Pistachio Balsamic and a Brioche alla Minute, he pours a 2010 Loosen Brothers “Dr. L” Riesling from the Hudson Valley.  The wine selection continues to impress with a 2010 Jax Y3 Sauvignon Blanc to compliment the Carrot & Cauliflower Agnolotti with local Avalanche Ranch Goat Cheese and a Walnut Pesto. For the entrée, a 2008 Arboleda Carmenere from the Colchagua Valley in Chile goes perfectly with the Colorado Rack of Lamb and Rancho Gordo Bean Cassoulet. The lamb is so fresh and tender it literally falls off the bone.

Make sure to save room for dessert at Plato’s.  Chef Slossberg will continue to surprise you with a choice of his comforting Flourless Chocolate Cake, a Liquid Lemon Cheesecake or a sinful Frozen Hot Chocolate with homemade Donut Holes and Butterscotch Bread PuddingOr perhaps you would prefer a real Colorado treat of S’mores by the outside fire pit while you gaze at the stars.

The restaurant’s Bauhaus design is modern yet functional with the entire restaurant enclosed by floor to ceiling windows that offer impressive views of the Colorado Rocky Mountains in every direction.  If you’ve spent the day hiking, biking or skiing in Aspen, you’ll certainly appreciate following it at Plato’s. In fact, no trip to Aspen would be complete without eating here where the food, wine, service and atmosphere will leave your heart content.
