Opening the Blade
The famous Blade Sushi is back at the Fontainebleau in Miami Beach. The restaurant closed about a year ago, but it’s back in full swing. It now shares the large dining room with Vida, a classy American restaurant with a “modern brasserie menu,” but it definitely asserts its own identity with a bustling sushi bar, vibrant menu, and modern, club-like décor.
Blade Sushi offers a revamped menu featuring a wide variety of sashimi, sushi rolls, and specialty rolls (headlined by the Blade and the Vida rolls), all made with the freshest ingredients. Many of the specialty rolls combine traditional Asian flavors with modern, creative elements. The Blade roll, for example, is comprised of marinated salmon, fresh mozzarella, spicy mayonnaise, and fried garlic, and the Vida roll is made with chopped hamachi, asparagus, oobaleaf, and wasabi tobiko serrano chili. An appetizer that you’ll need to consider is the octopus carpaccio, a tender serving of thinly sliced octopus with sweet pepper, tomato, red onion, cucumber and spicy vinegar dressing and yellowtail. The sushi bar is overseen by renowned sushi chefs Benny Bandi, Aki, and Diego Ng, who have trained with masters Nobu Matsuhisa and Morimoto and honed their skills at top South Florida restaurants like Nobu, Sushi Samba Dromo, and Morimoto.
For those looking to enjoy the vibrant nightlife afterward, the nightclub LIV is located in the same building. But make sure you get a few drinks first. Blade has a tasteful variety of Japanese beers and sakes, or if that’s not your style, you can order anything from Vida’s expansive drink menu, which includes wine and cocktails.
