On the island of Puerto Rico where most restaurants serve up tasty local dishes of Mofongo, Arroz con Pollo and Tostones, its nice when something new arrives to tantalize the taste buds of the locals (and tourists). Such is the case of Marmalade in Old San Juan.

Located in the heart of Old San Juan on Fortaleza Street, Marmalade is the latest incarnation of Peter Schintler, an award-winning chef who has worked around the globe under numerous Masterchefs and legendary restaurants including Le Cirque in New York City and The Shangi-la Hotel’s restaurant, Blu in Singapore.


With a trendy vibe and inventive dishes, Marmalade is a refreshing oasis amidst the cruise ship-filled eateries around the area. With a diversified menu, along with a full ten-course tasting menu option, complete with wine pairing, you’ll be able to enjoy a sampling of Peter’s unique cuisine. There are refreshing cocktails including their popular, Kiwi Libre and his signature soup, White Bean with Truffle Oil and Pancetta “dust.” He’ll even gladly hand over the recipe for you to try! The Queen Red Snapper was my choice and I could not have been more pleased. Served in a clear steam-poached bag filled with a broth of red peppers, chorizo and garbanzo beans, my taste buds were dancing to this wonderful symphony playing out in my mouth where different flavors lived together in perfect harmony. Although it caters to the carnivore-loving crowd, vegetarians will be pleased to see there are numerous options to appease them as well. Leave room for desserts! Their Crème Brule along with a cup of high-octane, Puerto Rican coffee will have you awake and Salsa dancing all night long!

Peter himself will most likely come out to explain the entire menu to you, should you have any questions. The wine pours were a bit on the small side, as are the portions, but worth every penny. The restaurant was not too crowded when I arrived at 6pm, leaving me to believe this is a late night dining destination. The crowd seemed young and hip, the lighting low and the music cool. It may appear a bit pretentious, but the service is outstanding and, along with their friendly manner, you’ll never be wanting for anything.
